Am I missing out on something special, I kind of have lactose issues as well. It usually doesn't stop me though from things I love with Cool Whip and cream cheese. Although the cream cheese is hard for me , I sometimes treat myself to a lemon cream or strawberry cream pie: I only use cool whip and fruit. I eat it in moderation because of lactaid issues. I love these recipes which encourage the use of fruit. Yes, that cheesecake is really that simple.

If I had to choose my favorite out of all these recipes, it would be the Strawberry Pretzel Dessert followed by the Pistachio Nut. To me, Cool Whip and cream cheese really are a magic combo!
